Mama Rosa
Offering dishes that put a new spin to the tried-and-true, family-owned Mama Rosa’s in Quezon City is popular even with diners : me from afar. Hip interiors complement the food, which range from Soft-shelled Crabs and Hipong Isidoro, to old favorites like the Humba Pata (pork shank in sweetened soy sauce), Talong at Sitaw Oriental (eggplant and string beans), Tuna Belly and Ginataang Kalabasa (squash in coconut milk).
For starters, try the Pako (fern) at Suha (pomelo or grapefruit) Salad, or go for the Aro-arosep (seaweed) Salad. Also dig into dishes like the Chicken Stuffed with Green Mangoes and Pandan Leaves, Pancit Habhab, and the Crispy Tadyang that high-lights prime beef ribs fried and served with pickled kangkong (swamp cabbage) and balsamic vinegar.
Desserts are plentiful and we recomend either the Frozen Dayap Mousse or interesting Sapin-Sapin (rice cake) Mousse. Diners may take home some of the prepared sauces on sale at the deli counter or tote home some specialties like Lucban longganisa (sausages) or bacalao (codfish).
